The tasty seasonal veggie that adds a surprising twist (and some awesome nutrients) to your smoothie routine? Acorn squash! Try this recipe to give it a go.

Serves 2

Ingredients:

  • 1 cup chilled, cooked acorn squash
  • 1 tsp pumpkin pie spice
  • 12 oz coconut water
  • 1 tsp vanilla extract
  • 6 pitted dates
  • 2 tbsp almond butter
  • 1/2 banana

Directions:

In a blender, puree until smooth. Pour into 2 glasses; serve.
